Delivering the Aroma of Home-Roasted Coffee to Higashikawa Town
Higashikawa Town, nestled at the foot of Hokkaido's Daisetsuzan mountains, is known for its beautiful rural landscapes and pristine water. It was in this town that we started Taisetsu Coffee in 2013.
It began as a small coffee shop called Roaster Coaster. In fact, this shop was Higashikawa Town's first home-roasting coffee shop.
A Dream Born from a Small 1kg Roaster

The first equipment we acquired was a tiny 1kg roaster. The amount of beans we could roast at one time was truly small. But with that small roaster, we began to deliver each cup of coffee with all our heart.
That 1kg roaster is still kept on the counter of our coffee shop today. It's a precious memento to remind us of where we started—our origin. We continue to roast in relatively small batches even now, a testament to our commitment to maintaining quality.
Our Commitment to Home Roasting
"Home roasting" means roasting green beans by hand. The greatest appeal is being able to deliver the aroma and freshness of freshly roasted coffee, something that major coffee chains cannot offer.
At the time, there were no home-roasting coffee shops in Higashikawa Town. With the desire to "deliver truly delicious coffee to this beautiful town," we embarked on a journey to introduce the culture of home roasting to Higashikawa Town.
We carefully select Q-grade specialty coffee beans for our blends. By roasting high-quality beans meticulously, we deliver the finest cup of coffee.
Daisetsuzan Snowmelt Water and French Press
Higashikawa Town is known as the "Town of Photography," but it has another treasure: natural snowmelt water from Daisetsuzan. This pristine water makes our coffee even more delicious.
At our shop, we brew coffee using a French press. In the delicious snowmelt water from Daisetsuzan, the coffee is slowly extracted for 4 minutes—that time creates its rich aroma and deep flavor.
The name Taisetsu Coffee holds two meanings: "Daisetsu" (大雪, referring to the mountains) and "Taisetsu" (大切, meaning important or cherished). Our wish is to deliver each cup of coffee with care, thankful for the blessings of Daisetsuzan's nature.

From our first step at Roaster Coaster, it's been over 13 years. As pioneers of Higashikawa Town's home-roasting coffee culture, we have continued to share the charm of delicious coffee.
